Each year, from the very first basket of olives picked on the first day of harvest, we press a limited release of Olio Nuovo — our highly prized “new oil”.
Made from the freshest, greenest olives, picked before they reach full maturity, Olio Nuovo is something truly special. At this early stage, the olives contain only around half the oil they would produce if left longer on the tree, making this an especially precious and limited yield.
The oil is unfiltered and bottled immediately after pressing, which gives it its beautiful cloudy appearance and allows tiny fragments of olive pulp to remain suspended in the bottle. This is part of its charm, but it also means it has a shorter shelf life — around six months. So, enjoy it while it is at its freshest. As with all olive oil, the closer it is consumed to harvest, the greater the health benefits.
Why is it so special?
Firstly, Olio Nuovo contains the highest levels of polyphenols and antioxidants of all our olive oils, making it exceptionally good for you.
Secondly, its flavour is unmatched. Often considered the gold standard of extra virgin olive oil, it is intensely fresh, grassy and vibrant, with a beautifully robust character and a distinctive peppery finish.
How to use it
Olio Nuovo is always the star of the show, so the simplest uses are often the best. Drizzle it over fresh bread, roasted vegetables, pasta, soups or salads to let its flavour shine.
For its health benefits, enjoy it straight by the tablespoon. It can also be massaged into skin and nails as a natural nourishing treatment.
